The recipe for success

The recipe for success

Retsina Malamatina is produced from the exclusive Greek grape varieties, Savatiano and Roditis. The winemaking is carried out by the white winemaking process, the controlled temperature and choosing exclusively the “foam” of the must (the prorogos). As a result, the specific characteristics in color, aroma, taste and quality are achieved. The quality of Retsina Malamatina is also ensured by the state-of-the-art facilities of its wineries, which operate with the most modern automated mechanical equipment.

The addition of a small amount of pine resin during brewing gives the characteristic flavour of retsina, releasing at the same time the fruity aromas of the varieties. If the beneficial properties of resin, which have been well known since antiquity, are added to these characteristics, this will result in a unique wine of an absolute Greek origin.

Wine type: Table dry resinated white wine (RETSINA: name by tradition)

Alcoholic grade: 11% Vol

Acidity: 4.2 gr/lt in tartaric acid

Volatile acidity:< 0.45 gr/lt in acetic acid

Free SO2 >: 15 and < 35 mgr/lt

Total SO2:< 180 mgr/lt

Potassium sorbate:< 200 mgr/lt

Sugars:< 4 gr/lt

Density: 0.9930 gr/ml at 20o C

Bottling plant

Malamatina’s bottling plant in Kalochori, Thessaloniki, is one of the largest in Europe. Here, 50 million bottles are produced per year – more than 40,000 bottles per hour – with technology that evokes the latest developments in the industry. We will be very glad to guide you and treat you a cool Malamatina at the end of the tour!
Requests for school / tourist groups are accepted (without the treat!).

The E. Malamatinas & Son S.A. accepts any organized groups of bodies or schools wishing to be informed about the winemaking and bottling process. You can visit one of our three wineries in Evia as well as our state-of-the-art bottling plant in Kalochori, Thessaloniki.
